100gr tipo OO flour
50 gr mealworm flour
50 gr durum flour
2 1/2 eggs
1 tsp salt
Add the flours and open a hole in the middle for the eggs.
incorporate the eggs and the flours slowly with your hands.
Mix the dough until achieving a homogeneous consistency and adjust if necessary.
Note: the flours can be combined according to taste and it is possible that more flour or more liquid is required to achieve the correct consistency
After the pasta dough is well incorporated, roll it into a ball and cover with plastic film and let it rest for at least 30 min.
Break the pasta dough in smaller pieces and add a bit of flour to both sides before extended the pasta in the pasta machine follow the instructions from the machine.
